Eggs are one of the few foods considered to be a complete protein, because they contain all 9 essential amino acids.  Amino acids are considered the “building blocks for the body”. I like them for their reasonable price, and the expedient way they bring a meal together.

Mexican scrambled eggs

5 large eggs
2 Tbsp. milk
1/2 tsp. salt
1 tsp. Mrs. Dash
1/4 tsp. pepper
1/4 cup diced green onions
1/4 cup diced peppers
1/2 cup shredded
Mexicana cheese
4- 8 inch tortillas
Salsa

In a bowl, whisk together eggs, milk, salt, pepper and Mrs. Dash. Stir in onions, peppers and cheese. Wrap the tortillas in foil and place in preheated oven for several minutes. Meanwhile in a lightly greased preheated frying pan pour in the egg mixture. Stir gently with a spatula occasionally until all the egg is set. Spoon eggs into the center of the warm tortillas. Serve with salsa.

Spinach egg casserole

1 cup raw rice
1 pkg. frozen chopped spinach
4 eggs
1 cup shredded cheese
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. Mrs. Dash

Cook rice as directed on package. Defrost spinach and drain excess water. Mix with the rice. Combine the eggs, salt, pepper and Mrs. Dash. Add to the rice/spinach mixture. Place in a lightly greased casserole dish and bake at 350° for 30-40 minutes or until set in the middle.
